Make a delicious and healthy Hyderabadi Dessert in minutes with Kaddu (Bottle Gourd). This easy Kaddu ki Kheer
INGREDIENTS:
- Milk 1 liter
- Kaddu (Bottle Gourd) 1 Medium (grated)
- Khoa 50 gm
- Cashew nuts (kaju) 1 Cup (handful) grind to paste
- Basmati Rice 1 Cup (handful) (soak in water for 30 mins)
- Elaichi (Cardamom) powder pinch
- Saabudana (Sago) 3 tbspns (soaked for 20 mins)
- Sugar to taste
- Green Food Color 2-3 drops
- Pineapple essence 1 tsp
- Saffron (zafran) few strands
- Almonds cut finely for garnishing(soak them a day before)
- Boil grated Kaddu in water or Milk to almost done.
- Dry Basmati Rice on a soft cotton cloth then grind it to granules and keep aside.
- Boil Milk and add Cashew nut paste,Basmati Rice, Saabudana (Sago)
- Keep stirring every now and then.
- Add Elaichi(Cardamom) powder,few saffron strands.
- When the Rice is almost done add cooked Kaddu to it and cook till desired consistency (it should be thick).
- Finally add Sugar,Khoa,Pineapple essence,Green food color to it.
- Garnish with Almonds and serve chilled .
